When living as a family, dinners at the dining room table may be a normal occurrence. While this typically involves cooking for several people, things may look a little different when you’re older. As the kids move out of the house, you may find yourself cooking meals for just one person. However, this can be a challenge. While you never want to make a huge mess while cooking, you also want healthy, nutritious meals. Luckily, there are tons of incredible recipes for one.
In this post, we’ll discuss 3 healthy recipes that are perfect for one person.
Spicy Salmon with Caramelized Onions

Ingredients
- 1 ½ teaspoons ground black pepper
- ½ teaspoon paprika
- ¼ teaspoon cayenne pepper
- 1 teaspoon minced garlic
- 1 tablespoon Dijon mustard
- 1 tablespoon brown sugar
- ½ teaspoon onion powder
- ¼ teaspoon salt
- 1 tablespoon olive oil
- 2 (6 ounce) salmon fillets
- 2 tablespoons olive oil
- 1 ½ tablespoons minced onion
Directions
First, grab a small bowl and add paprika, black pepper, mustard, minced garlic, and cayenne pepper. Then, add 1 tablespoon of olive oil to create a paste. Next, you’ll want to add the paste on top of the salmon fillets, then set it aside to marinate for about 30 minutes.
The following step involves heating 2 tablespoons of olive oil in a small pan on medium heat. Add in the onions and cook for about 10 minutes, until golden brown. Then, heat up a non-stick skillet over medium-high heat. Place the salmon on the skillet and cook until golden brown on each side. This usually takes around 4 minutes on each side. Before serving, cover the fillet with the browned onions and olive oil.

Looking for recipes for one but don’t want to cook for hours? If so, you have to try this beer, bacon, and beef spaghetti. If you like all of these, the combination is perfect in this dish. And better yet, you only need a handful of ingredients to bring this meal to life!
Ingredients
- 2 tbsp olive oil
- 8 streaky bacon rashers, chopped
- 1 onion, finely chopped
- 1 leek (pale part only), thinly sliced
- 3 garlic cloves, chopped
- 6 thyme sprigs, leaves picked
- 2 tbsp tomato paste
- 500g beef mince
- 1/4 cup (60ml) Worcestershire sauce
- 345ml beer (we used lager)
- 400g can chopped tomatoes
- 400g bucatini or other long pasta
- Grated parmesan and chopped flat-leaf parsley, to serve
Directions
First, go ahead and heat a large saucepan over medium heat. Cook the bacon for about 5 minutes, then add the leek and onion. After cooking for 3-4 minutes, add the garlic and thyme, then cook for an additional 2 minutes. Increase the heat to medium-high and add the tomato paste. After cooking for about 1 minute, add beef and cook for 5 minutes until browned.
The next step is to add Worcestershire sauce, beer, and the chopped tomato as you’re scraping the bottom of the pan. Bring everything to a simmer, then reduce heat to medium-low and cook for around 30 minutes. You want the ingredients to thicken.
The following step involves cooking the pasta according to the package. Then, drain the water, but leave ⅓ cup. Add remaining water to the beef mixture, stir, then add the pasta. After giving the dish a good stir, it’s ready to be served!
